My husband’s favorite menu item at Texas Roadhouse (besides their delectably un-healthy ribs) is the “Smothered Chicken”. It’s a healthier dinner option and it is DELICIOUS! I have tried three or so different “copy-cat” mushroom chicken recipes I’ve found online, trying to mimic Texas Roadhouse Smothered Chicken, but they have not come close… until this one.
Yesterday I was trying to decide what to cook for dinner. I literally closed my eyes in my pantry and imagined how I could create a Roadhouse-worthy smothered chicken. I imagined the garlic sauteing and the need for a rich, flavorful gravy. It all came together beautifully!
If you like mushrooms put this on your menu this week! You won’t be sorry!
One thing you will need though, is a wok ( we have this one: $30 bucks)! The wok will allow you to fit the entire entree for your family in one pan– You could try half-ing the recipe and use the biggest pan you have! I use our wok ALL. THE. TIME. Probably averaging twice a week? I rarely put it away! My go-to meals I use the WOK for are: Stir Fry, Egg Roll in a Bowl, Cauliflower Ham Fried Rice and One Pan Chicken Pesto with Veggies- all made possible in one pan and feeds our family of six!!!
