Made in the crock-pot, this keto-friendly pasta is SOO easy to make! Zucchini noodles keep this dish low-carb and it is oh-so-creamy! The sun-dried tomato sauce mixed with lightly cooked zucchini noodles pack an excellent flavor. This is one dish I can’t keep all to myself!
Most of my married life my husband has watched calories. Lately, he is into getting as much nutrition as possible, while following the popular Keto Diet. His diet “needs” along with an abundance of zucchini coming from our garden, forced me to try new things. This is how this recipe came to be- hope you enjoy it!
*This spiralizer is so handy! However, if you aren’t ready to commit to a spiralizer- grab a potato peeler to make these zucchini “ribbons” (aka flat, thin noodles).

I’m usually focused on healthy, low-calorie meals, so it was fun to find a low-carb, but creamy, indulgent menu option! This meal packs in about 50 grams of protein and only 16 carbs… depending on how big your plate is. 🙂 My hubby eats A LOT, so this is an average man-sized plate. On a semi-related note, my husband can pack in an ENTIRE Cafe Rio salad and finish off someone else’s plate… Then he’s ready for dessert. Love that man and his crazy big appetite.
I can’t say I love the keto (or keto-genic) diet myself. While I don’t judge anyone for how they choose to eat, with this new diet change my husband is doing- we end up with a lot of meat at our house. But for weight loss, I have seen it work well for my brother-in-law and sister-in-law. They all say they feel great on the diet, once they are on it for a week or so. At first they got sick with flu-like symptoms actually! Red flag, or no? What do you think about the Keto diet?
Personally, I think anything that is easy and has a base of fresh veggies (without a lot of processed garbage) is a good enough meal for me!
