I recently tried some lemon ricotta pancakes from The Cheesecake Factory. I was with a group of girls and we were a little hesitant about trying them… Ricotta cheese is kinda lumpy ya know? Luckily, the brave one of our bunch ordered them! She was nice enough to share and my life will never be the same 🙂 These pancakes are delightfully bright and sweet all on their own. I was on a “no sugar” challenge at the time, so I didn’t try the pancakes with syrup, but they didn’t need it! Added bonus: no sticky little hands 🙂
My next trip to the grocery store included lemons and ricotta cheese so I could try to recreate this breakfast. Four tries later, and I think I’ve found a perfect balance of a healthy, relatively easy, and DELICIOUS lemon ricotta pancake recipe! These are actually high in protein and can be a low-sugar breakfast treat!
I add a teeny bit of PURE natural stevia (natural, 0 calorie sweetener) to the batter and they are delicious with-out syrup! Just top with fresh berries and whipped cream and you are set.
