I was in a lunch rut. Actually, a food rut in general. Do you know what I’m talking about? When nothing sounds good, and you feel unmotivated to make anything? Well last winter, I was totally feeling the lunch rut, and this is when this Easy Tomato Basil Soup post came to be! This soup has saved the day for me many-a-time, and this was one such occasion.
It was the week before our “would-be” cruise to the Caribbean. Unfortunately, my hubby broke his ankle playing basketball with a bunch of 15 year-olds, and the trip was canceled! I couldn’t help but wish I could sit down hungry, and have the dining staff bring me something really delicious like they do oh-so-well on a cruise. Alas, the cruise-ship dining staff will have to wait a while for us. Thankfully, yesterday was a cold gray day and I have a go-to lunch that lifts me up every time.
It doesn’t get easier and faster than this for a “homemade soup”:
Grab your favorite blender and pour all these ingredients in:
- 1 can diced tomatoes.
- 1 tsp dried basil (I usually just sprinkle a few shakes in to save myself the measuring step!)
- 1/3 c whole milk, or better yet, heavy cream if you have some on hand!
- Salt and pepper to taste.
* Be warned- this does not look appetizing in the blender, but continue blending until smooth then…
Heat up the soup on the range while you cook some grilled cheese sandwiches (with added spinach). Now you have a yummy lunch that might make you as happy as if it was brought to you on the crisp white tablecloths of a cruise-ship dining room. Oh, and did I mention my kids love this soup? They do! So, that makes me love it even more 🙂

I have several wonderful memories attached to this delicious tomato-basil soup and this was another one for the books! My Grandma Chris taught me to make it one day, just a few months before we knew she had cancer. She had me serve it on the china she insisted I needed for my wedding 😉 I’m glad she could share this go-to, healthy soup option that even my pickiest eater loves! Hope you enjoy it too!

- 1 can diced tomatoes
- 1/3 cup whole milk (heavy cream is the best if you have some!)
- 1 teaspoon dried basil
- salt and pepper to taste
Ingredients

- Dump all ingredients in a blender. Blend for 30-60 seconds until smooth.
- Heat soup on your stove for about 2-3 minutes until hot.
- Serve with grilled cheese, tomato, and spinach sandwiches!
